A Brief, Passionate Defense of the Diner Burger
A diner burger has a job. It is not trying to win a chef competition on television. It is trying to taste like someone actually seasoned the beef, toasted the bun, and did not treat lettuce as a garnish you find later in the bag.
We grill them to order. They come with fries because that is the social contract. You can upgrade to onion rings or fruit or soup if you are in a mood. Gluten-free bun exists and costs a little extra because the bun costs a little extra. I am not going to apologize for math.
The Cabaret Burger is the classic: cheese, lettuce, tomato, onion, pickle. The menu copy says "she's basic but she's classic," which is the nicest thing you can say about a cheeseburger and also about half the people I love. Add an egg. Add bacon. Add avocado. Or don't, and let the thing be a cheeseburger.
The Jolly Roger is pepper jack, grilled jalapeño, and jalapeño cream cheese. It has a small cult. People order it like they are letting you in on a secret, which is funny because it is printed on the menu. The Wakin' Bakin' is bacon, fried egg, and Swiss, which is breakfast and lunch holding hands under the table. The Santa Fe is pepper jack, avocado, southwest seasoning, sour cream. The mushroom-bacon-bleu is for the people who want the burger to have hobbies.
I have opinions about smash versus thick. I have opinions about American versus cheddar. I keep most of them off the ticket because the guest already knows what they want. The only burger opinion I will die on is this: if you are going to put jalapeño cream cheese on a burger, commit. Do not dab. Do not "light." The Jolly Roger is not a personality test. It is a wet, happy sandwich.
Burgers at a 24-hour diner do a different kind of work after midnight. They are not a "quick bite before a meeting." They are the decision you make when the show is over, the patio upstairs is winding down, and you are not ready to go home and look at a dark kitchen. We will still cook it. We will still send fries. We will not ask you to justify it.
